Colour-Changing Butterfly Pea Lemonade

- • 200ml hot water
- • 1 tsp honey or sugar
- • Juice of 1 full lemon (the more the better for the colour change)
- • Ice cubes
- • Sparkling water (optional)
Methods
- Steep the tea bag in hot water for 6–8 minutes until you get a deep, rich blue colour.
- Remove the bag, stir in honey, and let it cool.
- Pour over ice into a clear glass this matters, you want to see the colour.
- Now squeeze the lemon juice in slowly and watch the blue shift to violet and then deep purple as you stir.
- Top with sparkling water for fizz.
