Colour-Changing Butterfly Pea Lemonade
This is the recipe that will genuinely impress anyone you make it for. Butterfly Pea tea brews a vivid electric blue but the moment you add something acidic like lemon juice, it turns purple right before your eyes. It's not a trick. It's pure plant chemistry, and it never gets old.

• 1 Brew Sage Butterfly Pea tea bag
• 200ml hot water
• 1 tsp honey or sugar
• Juice of 1 full lemon (the more the better for the colour change)
• Ice cubes
• Sparkling water (optional)
Methods
Steep the tea bag in hot water for 6–8 minutes until you get a deep, rich blue colour.
Remove the bag, stir in honey, and let it cool.
Pour over ice into a clear glass this matters, you want to see the colour.
Now squeeze the lemon juice in slowly and watch the blue shift to violet and then deep purple as you stir.
Top with sparkling water for fizz.
