 Butterfly Pea Blue Rice (Neel Chawal)

Blue rice might sound unusual, but it's been made across Thailand, Malaysia, and parts of India for generations using butterfly pea flowers. The colour is entirely natural, the flavour is mild, and the result is a showstopper on any dinner table. What you'll need

  • • 1 Brew Sage Butterfly Pea tea bag
  • • 1 cup basmati rice
  • • 1.5 cups hot water
  • • A pinch of salt
  • • 1 tsp ghee or coconut oil
  • • 2 cardamom pods (optional)

Methods

How to make

  1. Steep the tea bag in the 1.5 cups of hot water for 8–10 minutes until the water is a deep, vivid blue.
  2. Remove the bag. Wash and soak your rice for 20 minutes, then drain.
  3. Add the rice to a pot with the blue tea water, salt, ghee, and cardamom pods if using.
  4. Cook on medium heat until the water is absorbed, then cover and steam on low for 5 minutes.
  5. Fluff with a fork and serve.
